We want to make a greater variety of mushrooms more accessible to our local community as there are over 2,000 species of edible mushrooms, not just button mushrooms!

Why we love mushrooms

ENVIRONMENTAL

Growing mushrooms uses a small amount of water, energy and land, making the overall footprint much less than other sources of protein.

We also take a circular approach; using local waste products such as hardwood sawdust, spent beer grain and coffee chaff to grow our mushrooms.

NUTRITIONAL

Mushrooms are high in protein, vitamins, minerals, antioxidants and fibre, particularly beta glucans.

Health benefits typically include lowering cholesterol, regulation of blood glucose, liver protection, immunomodulation and reduced inflammation.

MEDICINAL

Mushrooms are medicinal powerhouses, showing great potential for treating and preventing various ailments. Initial studies have indicated that Lion’s Mane and Shiitake may contain anticarcinogenic compounds, and Lion’s Mane has neuroprotective properties, supporting nerve and brain health.

The name takes inspiration from the bucolic rolling pastures of the
Jamberoo Valley.

Largo has Italian roots and means to play a piece of music slowly, and brae is a Scots word for a hillside or slope. Together, it can be literally translated to a slow or gentle slope, or more loosely… a lazy hill.

About us

Hi! We are Amos and Gemma, the South Coast’s new friendly local mushroom farmers!

We met while studying at the University of Sydney and both quickly fell in love with microbiology as we started learning about the hidden world of microbes. Learning about microbiomes, fermentation, mycorrhizal fungi, bio- and myco-remediation and the weird and wonderful roles microbes play in our environment ignited passion and excitement in the two of us.

Looking back at our time at University and the years following (read more here), it seems that all roads led to Largo Brae Farm.

We are passionate about sustainable food systems, where conscious production meets fresh, delicious and nutritious produce.
